There are a lot of ok hummus recipes on the internet. Lucky you, you found the best one! This recipe is a combination of a few that I liked and a little advice from a local chef. Indulge.

Ingredients
- 1 cup dried chickpeas, soaked (in a pinch use 15.5 oz can organic chickpeas)
- ¼ cup fresh lemon juice
- ¼ cup extra virgin olive oil
- ¼ cup organic tahini (sesame seed paste)
- 1 medium head of garlic (about 10 cloves)
- 1 teaspoons ground cumin
- 1 teaspoons paprika
- 1 teaspoons black pepper
- 2-3 tablespoons of cold water
Instructions
Soak the chickpeas
In a large bowl, submerge 1 cup of dried chickpeas in cold water. Let sit on your countertop overnight or 24 hours. They will triple in size. Be amazed.
Roast the garlic
Preheat your oven to 400 degrees. Take your garlic head and peel off most of the outer skin into your trash/compost. With a knife, chop off about a ¼ inch off the top, exposing the garlic. Get some aluminum foil, and cut off a piece large enough to wrap around the garlic head or use a garlic roaster. Drizzle the garlic with a little olive oil. Loosely close the foil around the garlic and put in the oven for 40 minutes. Before you know it, your kitchen will smell phenomenal!
Blend the mixture
In a blender, combine the chickpeas, 2 tablespoons of cold water, ¼ cup of lemon juice, ¼ cup of olive oil, ¼ cup of tahini, and the roasted garlic. Add in 1 teaspoon of each – cumin, pepper, and paprika. Blend on low speed until smooth. If the hummus is too thick, add an additional tablespoon of cold water to thin it out.
Finish and serve
Scrape the hummus into a serving bowl and garnish with a dash or two of paprika. If you have the time, let the hummus rest in the refrigerator for an hour to let the flavor settle.
Serve with pita chips, fresh cut carrots, cucumber, bell peppers or whatever you like. Leftover hummus can last about 10-14 days in an air-tight storage container in your refrigerator. Snacking for days!
