Avocado Edamame Salad

This unique edamame salad with turn heads at your next cookout or BBQ. Packed with protein, garden tomatoes and a zesty taste – it’s a winner.

Ingredients

  • 2 cups edamame
  • 1 avocado
  • 1 cup cherry tomatoes
  • ¼ cup red onion
  • ⅛ teaspoon cumin
  • 1 teaspoon olive oil
  • Juice from a lime

Instructions

Prepare vegetables

Start by washing the 1 cup of cherry tomatoes and then slice in half. Next, chop ¼ cup red onion. Set aside. Bring a large pot of water to a boil, then add the 2 cups of edamame. Boil uncovered for 4 minutes. Then drain and rinse with cold water.

Combine mixture

Combine the edamame, tomatoes and red onion in a large mixing bowl. Next, slice and core the avocado and slice into small cubes. Add those to the mixing bowl.

Make cumin dressing

In a small mixing bowl, combine juice from 1 lime, 1 teaspoon olive oil, and ⅛ teaspoon ground cumin. Whisk until combined, then pour over the edamame mixture.

Finish and serve

Transfer mixture to a serving bowl and chill in the refrigerator for 30 minutes before serving.
