Pro Tip

When making this recipe I prefer to do some of the work the night before in case you’re not a morning person like me.

Activate

In a mixing bowl, pour ⅔ cup lukewarm water, 1 teaspoon yeast and ¾ tablespoon sugar, and let sit for 5 minutes.

Make the dough

Add in 2 cups flour and ¾ teaspoon salt. Mix ingredients using an electric mixer with the dough hook attachment for 10 mins. As the dough kneads, it shouldn’t stick to the bowl. If so, sprinkle extra flour to dry it out. Next, remove the dough hook and cover with a cloth for 1 hour to rise.

Refrigerate the dough overnight by placing in a sealed, oversized container.

Dough prep

Preheat your oven to 400 degrees and remove your dough from the fridge. Punch down the dough a few times and let it warm up to room temperature while the oven preheats.

Form bagels

Boil a large pot of water on your stovetop. Next, divide the dough in half and then half again to get 4 evenly sized balls. Roll each one into a tight ball. Then using your thumb, poke a hole in the middle and massage the opening until you form a dough hole shape. Repeat for the other balls.

Boil bagels

Place 2 bagels at a time to the boiling water. They should immediately float to the top. Boil bagels for 2 minutes a side, flipping with a wooden spoon. Once finished, carefully remove bagels and let dry on a clean towel.

Season bagels

Pour the everything seasoning onto a plate, and press one side of the bagel down until the seasoning thoroughly sticks. Repeat for the rest of the bagels. Transfer the seasoned bagels to a baking sheet layered with parchment paper.

Finish and serve

Bake for 20 mins or until golden brown. Let bagels cool down before cutting and chowing down. Pair with your favorite vegan cream cheese or make into breakfast sandwiches. Your bagels, your rules.
