Ingredients
- ½ cup dry lentils
- 2 carrots
- ½ onion
- 3-4 stalks of celery
- ½ bell pepper
- ½ zucchini
- 1 cup canned white beans, drained and rinsed
- 2 cloves garlic
- Burger buns or loaf bread
Sloppy sauce:
- ¼ cup ketchup
- 1.5 tablespoons BBQ sauce
- 2 tablespoons tomato paste
- 1 teaspoon brown sugar
- 2 teaspoons chili powder
- 1 teaspoon chili pepper flakes (optional)
Instructions
Cook the lentils
In a medium pot, boil 1.5 cups of water. Measure ½ cup of dry lentils and rinse thoroughly in a mesh strainer, then add to the boiling water. Cover lentils and reduce to medium heat, cooking for 15 minutes. When time is done, sample lentils for texture. They should be soft enough to chew, but not mushy. Drain and set aside.
Prepare the vegetables
With a knife, dice 2 carrots, ½ onion, 3-4 stalks of celery, ½ bell pepper, and ½ zucchini. Also, mince 2 cloves of garlic. Next, using a large fry pan, saute onions and garlic over medium heat for 5 minutes. Add remaining vegetables and cook for another 5 minutes, until vegetables soften.
Create the sloppy sauce
Add the following to your mixture – ¼ cup ketchup, 1.5 tablespoons BBQ sauce, 2 tablespoons tomato paste, 1 teaspoon brown sugar, and 2 teaspoons chili powder. Stir to combine. If the mixture is thick, add 1 teaspoon of water. Reduce heat to low, cover and continue to cook for another 5 minutes or so. Keep mixture warm until ready to serve.
Finish and serve
Prepare four (baked or room temperature) burger buns. Scoop generous amounts of sloppy joe mixture onto the buns. Top with vegan cheese, pickles, jalapeños, cabbage or lettuce. Serving with french fries is a wise choice. Dig in!
