Sweet Potato Veggie Burger

In need of a veggie burger that doesn’t disappoint? I got you! Enter the most delicious sweet potato black bean burger you ever had in the comfort of your own home.

Ingredients

  • 1 large sweet potato
  • 1 cup canned black beans
  • ½ cup dry brown rice
  • cup red onion, diced
  • ¼ cup fresh cilantro leaves
  • 1 teaspoon paprika
  • 1 teaspoons cumin
  • ½ teaspoon chili powder
  • ½ teaspoon black pepper
  • 4-5 burger buns

Toppings

  • Sliced avocado
  • Vegan cheddar cheese
  • Apple slaw
  • Red cabbage, spinach or lettuce

Instructions

Cook the rice

Measure ½ cup of dry brown rice and cook to package instructions. Should be somewhere around 30-40 mins to cook.

Bake the potato

Preheat your oven to 400 degrees. Wash and dry a medium sweet potato, slice in half lengthwise and place on an oiled baking sheet. Poke several holes through the skin with a fork. Bake for 30 mins or until soft and oozing with goodness.

Prep the vegetables and spices

Dice cup red onion and ¼ cup cilantro leaves. Next, measure out 1 teaspoon paprika, 1 teaspoon cumin, ½ teaspoon chili powder and ¼ teaspoon black pepper.

Combine ingredients

In a large bowl, mash the black beans and rice together. Then carefully add the hot sweet potato, removed from it’s skin, red onion, cilantro, and all the spices. Mix it real good! Next, divide mixture into 4-5 evenly sized balls. Then shape each one into burger-shaped patties.

Cook and serve

Bake the burgers for 20-25 mins at 400 degrees. Alternatively, these burgers cook well on the grill, but try to use a grill mat if possible. Just grill 10 mins a side. Serve on a burger bun with apple slaw, avocado, vegan cheese, lettuce and ketchup.

Store your burgers

These burgers are great for a quick meal when you are too tired to cook during the work week. To freeze, layer each patty with parchment paper and store in a freezer safe bag. To cook, bake for 30 mins at 400 degrees or grill for 10 mins a side. Dinner in a flash!
