- 2 cups yukon potatoes
- 1 cup carrots
- 1 cup celery
- 1 cup sweet onion
- 1 cup green beans
- 1 small can of whole kernel corn, about ½ cup
- ½ cup fresh or frozen peas
- 3 cups vegetable broth, plus a ¼ cup for making a roux
- 2 tablespoons all purpose flour
- Salt, pepper
- Homestyle biscuits (Pillsbury or Annies)
Instructions
Before you begin
Don’t buy vegetable broth from a grocery store! It is so easy to make on your own. View the recipe here. Plan ahead an extra hour to make the broth. It will be well worth it!
Cut the vegetables
Using a knife, cut up 2 medium Yukon potatoes into dime-sized cubes, about 2 cups total. Next, chop 1 cup of each – carrots, celery, sweet onion and green beans. Meanwhile, get your oven preheated for those biscuits. Place them on a baking sheet and cook according to package directions.
Cook the vegetables
In a large stock pot, sauté potatoes in 1 tablespoon of olive oil for 7 minutes over medium heat. Add in the chopped carrots, celery, onion, and green beans. Mix and cook for another 7 minutes. Add in ½ cup of each – corn and peas. Cook for another 2 minutes. Time to remove the vegetables to make the gravy. Remove the vegetables from the pot into a large bowl. Set aside.
Make the gravy
Using the same pot, add in 3 cups of vegetable broth. Crank up the heat to medium-high, you want the broth to simmer. On the side, mix together ¼ cup of warm broth and 2 tablespoons of flour in a cup. Quickly whisk together to form a white liquid called roux. Make sure there are no flour chunks.
Once you get the broth to a low simmer, add the roux to the pot and vigorously whisk together. After 2 minutes of whisking, periodically, you should see the broth start to thicken into gravy. Add in salt and pepper to your desired amount. If the broth doesn’t thicken, it’s time to panic! Just kidding, slowly start to add in some sifted flour, about 1 teaspoon at a time and keep whisking. Give the gravy time to thicken, about 2 minutes before adding more, you don’t want it to taste starchy. Add in salt and pepper to your desired taste.
Finish and serve
Bring back your bowl of vegetables to the gravy, coat well, and simmer over medium heat for another 5 mins. Remove your biscuits from the oven and cut in half lengthwise when cool enough to touch. Place the bottom biscuit on a dining plate and layer with a generous serving of vegetable/gravy mixture, and finish with the top biscuit – forming a sloppy joe looking sandwich. But make no mistake, eat with a fork and knife along with all your other favorite holiday sides. Grace!
